With Valentine’s Day behind us, the next big holiday on the horizon is St. Patrick’s Day. And what better way to celebrate Irish culture this March 17th than throwing back a pint of Guinness! But did you know that you can eat it, too? Make this three-course meal starring the quintessential Irish stout.

Guinness and Cheddar Dip [The Parsley Thief]
For your first course, whip up this hearty appetizer! Cream cheese and shredded cheddar mingle with a quarter-cup of Guinness, plus half-and-half, Dijon mustard, and salt. Blend everything in the food processor, then add optional extras such as chopped scallions, fresh parsley, or hot sauce.

Irish Beef Stew [TasteFood]
Make this Irish beef stew the main event! Tender chunks of beef mingle with carrots, onions, and whatever root veggies you have on hand. The broth begins with a base of beef stock, which tomato paste and Guinness (or another Irish stout) enhance with even more flavor. The fresh herbs and spices don’t hurt, either!

Guinness-Pretzel Truffles [Sprinkle Bakes]
On to the grand finale! You’ll need a 12-ounce bottle of Guinness for this one. You start by simmering Guinness with semisweet chocolate, creating a creamy cocoa liquid. Next, butter and a Guinness reduction thicken things up, with crushed pretzels bringing some crunch. This ganache goes in the fridge overnight so that you can roll it into small balls and coat each truffle with crushed pretzels the following day.
